Saffron is the stigma of the crocus flower. Each crocus produces just three stigmas, which are hand-picked and then dried. It takes thousands of stigmas to make only one ounce of the spice, which makes saffron the most expensive spice in the world.
Saffron has a strong and distinctive aroma and flavour, semi-sweet, slightly bitter and with a suggestion of something floral.
Saffron has a long history of use in traditional medicine, to help with many conditions the most significant of them being depression and low mood.
